I think these spaghetti squash pancakes are the best pancakes I have ever made. There’s 2 ½ cups of spaghetti squash in this recipe-but you would never know it! They need to cook 5 minutes on each side so they are a high rise pancake. Scrumptious! I wish I could include a photo! Granted I am a veggie pusher.
